Keep your cool through the summer with our recipe for these healthy frozen yoghurt cups.
It only takes four ingredients and a few minutes to prepare these nice icy treats.
You can also tweak the recipe to include your favourite flavours, using different combos of fruits and nuts.
Ingredients
- Low-fat plain yoghurt – contains calcium for strong bones and teeth
- Berries (fresh or frozen) – packed with vitamins, minerals and antioxidants
- Nut Butter (e.g. almond butter, peanut butter or cashew butter) – for a protein hit
- Nuts, roughly chopped (e.g. walnuts) – full of healthy fats, protein and fibre
Method
- Line a cupcake tray with cake cases and fill the bottom of each with a tablespoon of yoghurt.
- Layer berries, nut butter and nuts on top of this.
- Top with another dollop of yoghurt.
- Put the tray into the freezer for a minimum of three hours, until the frozen yoghurt cups are ice-lolly like. For the best texture, leave them to thaw briefly at room temperature before eating.
